Poached Salmon with Maisonette Sauce

Serves 4

8 3 oz pieces of fresh salmon fillet

Poaching liquid: 2 quarts water. 1/2 yellow onion sliced. Juice of 2 lemons. Salt to taste (salty like the sea).

Simmer water with 1/2 sliced yellow onion for 15 minutes in a straight-sided saute pan or similar. Add salt until it is salty, like the sea, and the juice of 2 lemons.

Add in pieces of fresh salmon and cook for about 4 minutes or until just done and the center is cooked to your liking (well done or medium).

Maisonette Sauce

Yield: 3/4 cup

Ingredients


  • ½ cup mayonnaise
  • 2 tablespoons catsup
  • 1 teaspoon brandy
  • 1/2 teaspoon Tabasco
  • 1/2 teaspoon salt
  • Pinch of ground pepper
  • 2 tablespoons grapefruit juice

Combine all ingredients and mix well with a fork or whisk.
